Kintsugi Kitchen, I need your help!

    I have a unique and actually pretty great problem currently: Because we're both unemployed due to covid, we're getting the maximum amount of food benefits available for our family. Additionally, because of covid, we're also getting and additional $200 per kid.... Y'all I have $1200 on my EBT this month.

    My current challenge: stock our pantry with as much non-perishable (or long shelf life) food as possible.

    Hurdles for the goal: we're moving into a 10x20 cabin. space is limited and we also have hella mice rn so it all has to be in a chew proof container or able to be stored in a bulk bin. We're also limited on freezer space currently. We'll be getting a chest freezer hopefully soon but we don't have one rn and the bitty little box over top of the fridge is full of junk. Third hurdle is mice. There's hella deer mice at the cabin and they are voracious. They will get into anything I don't keep well protected so anything that doesn't come in metal, glass or hard plastic has to be put into a storage bin and that means spending the real money for storage bins

    What we currently have: (canned) chili, (canned) pork and beans, peanut butter, flour, rice, dried beans, stovetop stuffing, various dried fruit (cranberries, cherries, strawberries, apple, etc), powdered milk, powdered cream and powered cheese, dried onions, tomato powder, potato flakes/pearls, pancake and muffin mix, (canned) tuna and uuuuuuh that's all I can remember off the top of my head. I'll update it with a better check list, or as I add new things to the pantry.

    Resources: aside from a veritable bevy of grocery stores, Target and Walmart, we also have Costco AND URM. Amazon is an option? But their prices are super inflated rn on certain items.

    I'd always vote for more canned fish, since you've got the cash to spare. Salmon, the good tuna, sustainably fished varieties like sardines, whatever your fam likes to eat. peanut butter in glass or sturdy plastic jars. stock up on some nice jam? bc that's in glass also and lasts for a while. honey and/or maple syrup, sweetened condensed milk, coconut milk/cream, canned pumpkin for pumpkin bread/scones, canned chipotles, jars of coconut oil for shelf-stable and mouseproof shortening. spices in jars! that's what I'd buy at least :p

    Ooo hmm I'm the only one in my fam that likes pumpkin. Or sweet potato. Otherwise I'd get both. Does banana come canned? If not, I wonder if I could rehydrate banana chips. Maybe even grind it and use it powdered?

    We already have.... so much peanut butter. Spouse bought a whole bulk tub of it.

    Trust me I've been looking. A lot of it is really inflated though. Fruit especially and strawberries in particular. Cheapest is almost 3 dollars an ounce and some of them go up to $7!
