Catching all 151, er, 368, er ... a lot: The Pokemon Infodump Party!

The games have all the data from earlier regions, but short of trading in from older games there generally isn't any way to actually get those Pokemon.

 

in sun/moon there's "island scan" which can get you specific non-alola-dex-mons, but yeah otherwise you mostly have to trade or use the pokebank

 

Sun and Moon doesn't even have the National Pokedex, as far as I know. You have to use the new Pokedex function in Pokemon Bank, which isn't game specific.

If there are Sinnoh remakes this gen, I hope they have a National Pokedex.

 

the pokebank juuuuuust opened for sun/moon, and now you can find any pokemon in GTS but not in the wild.

 

There's a blog dedicated to the mystery person with GameFreak responsible for so many Fire/Fighting pokemon. It honors them by making a Fire/Fighting version of every pokemon from the original game.
