Maybe Eridan can be salted caramel macarons, only someone added too much salt so all you can taste is goddamn salt and are therefore only tolerable eaten along something super-sweet at the same time? Also, I kinda feel like Nepeta would be one of those super-cute mochi sweets modeled to look like a cat and decorated with dusting cocoa and sweet powders? But I'm not sure if that would fall into the lines as a 'pastry' here. I also want to say Vriska would be obnoxiously bright and tart blue raspberry-flavored 90's candies that leave your mouth sticky and blue, but that's definitely not a sweet. Maybe the donut from before, if we can cover it in blue raspberry nerds as well.
Sollux is beeklava. Or biklava. Jade is ANZAC biscuits. Jane should be something out of a Betty Crocker box but I think she's actually tiramisu. Vriska (vriska) is those crispy meringue puff things that look delightful but turn out to be made of dryness and deceit. Rose is those elegant little rolled-up wafer-and-chocolate things. early!Roxy is rum balls, later!Roxy is maybe Russian tea cakes? Terezi is something with some bite to it, like pfeffernusse or good hot gingersnaps. Kanaya is those Danish shortbread cookies that come in the tins everyone puts sewing supplies in. I know it's not cat themed, but I want to say Nepeta would be a girl scout cookie assortment?
I would actually thing sollux would be black and white cookies. (Schwarzweißgebäck, not sure if this translates as a thing)
i woulda suggested bienenstich / bee sting cake for sollux apple strudel for jade, because it's sold frozen, but then baked, like lofaf chili chocolate for terezi? (.... why, yes, chili chocolate is a pastry, what else would it be?) doboshtorte for john?

Mm those look good. I haven't had proper girl scout cookies in ages, none of the kids around my very-well-hidden neighborhood do it as far as I know. I miss samosas.
