    You know, I really like cream cheese frosting and I like chocolate cake just fine, but I've never had a red velvet cake that particularly wowed me. Maybe they just don't make it right in Canada.

    It's a pity it's too cold around my birthday for it, because my mom makes a fantastic chocolate peanut butter ice cream pie.

    I kind of feel like for your birthday you should get the cake you like, not the cake everyone else likes--it's YOUR birthday.

    I mean, sure, don't make all your friends eat something they think is absolutely gross, and make sure there's something available for anyone who's got dietary constraints...but if you'd rather have a strawberry ice cream cake, or a flan, or a cheesecake, or anything else that your guests are able to eat and won't be completely grossed out by, there's not really any reason why you shouldn't have that thing.

    JFC you have no idea how sad I am that that bakery went out of business. It was fucking amazing and gluten-free. There was a little bit of ginger in the frosting. I don't usually care for ginger, but it worked on that matcha cake.

    I have no idea, because red velvet is delicious--it's just not my absolute fave. There's a place in Alameda that makes gorgeous and delicious red velvet GF cupcakes. They are so tiny that I can eat a whole box of six, and so good.

    I often find the moisture content of red velvet cakes lacking but that seems to be a problem with chocolate cakes in general.

    With chocolate cakes I often put them in the microwave then eat them with cream which helps the dryness a lot

    That’s... odd. In my experience, it’s easier to keep red velvet and chocolate cakes moist, while white and yellow cakes tend to run drier.

    (Also swiss rolls cales best cakes. I made a gfree matcha one with red bean filling for Moony’s birthday omce and it was delicious.)

    I will die on the hill that my grandmother's coffee cream cake is the best cake in existence, and I don't even care for coffee, it just works.

    (Although the egg white biscuits are divine as well and I'll make some today)

    I´m surprised, I wouldn´t have described matcha as a delicate flavour tbh. I always found it too strong compared to regular green tea.
    I love red velvet but I´m the only one in our family whos ever made it, so for my birthday it tends to be something else. That and tbh, it´s a bit of a pain in the butt to make.

    Oh man, this is me on most occasions, though not usually my birthday at least. I mean I personally don’t hate chocolate or cake but neither is my absolute favorite, and the combo is not what I would choose.

    Chocolate pie is worse. I adore fruit pies but chocolate is somehow even less exciting than pecan, which I actively hate. We used to have chocolate pies on holidays sometimes, and I would just pass on dessert.

    I would get the triple chocolate ice cream cake from coldstone sometimes for my birthday, which is absolutely the best for me. Smother me in chocolate and I will be happy for ages

    Shrugs? Everyone anyways says to get ice cream cake but like, eh. They're always chocolate or vanilla. And while I like vanilla okay, it's not my favorite so shrugs.

    You gotta have a cake for candles and everyone else likes cake so like whatever. I still get my ice cream so I have something. I just don't care that much lol.

    I haven't had a party with cake in a long time though, so it's kinda a moot point. Maybe if I do something again, I'll do like apple pie because I didn't used to like it but now I love it lol

    What is a chocolate pie and just.... Why lol

    I actually kinda like chocolate pie, but I can get why people wouldn't.

    Pecan pie, however, is actually one of my favorite pies...I can't eat much of it at once 'cause it's so rich, but I adore it regardless.

    ALSO, where does everyone stand on the deliciousness that is pumpkin pie?

    My favorite birthday cake was some variation on a chocolate wafer icebox cake. I've had them plain, flavored with orange, and flavored with raspberry, and all are delicious. God, dairy can be so magical. I miss it. I wonder if there's a good non-dairy sub for that kind of thing.....

    Black Forest gateau was my most requested cake and I rarely got it because it's expensive and also fell out of fashion for a while here - too Seventies. Cherry and chocolate together are so good.

    Most pecan pies have too few actual pecans in them and are made with gross corn syrup.

    I use Whole Foods gf crust because it's easy and delicious, substitute actual maple syrup for corn, add cinnamon, a little black pepper, and Jack Daniels to the egg/syrup mix, and use all the pecans that will fit.

    Most non-pecan pie eaters who don't actually hate pecans or pie like the result, because it's not gloppy corn custard with a thin layer of pecans on the top.

    I also make a semisweet chocolate mousse pie with coffee, cinnamon and a bit of hot pepper in it that's much less boring than the standard French silk.

    I find a lot of traditional American desserts are better without gluten or corn syrup, with more spice, less sugar, and higher quality sugars.

    I am neutral on pumpkin pie because it really depends on the baker and the spices and ingredients.

    Good matcha is strong, but it's not bitter chocolate strong. That might just be because I hate bitter chocolate, though.
