I am cooking a duck for Christmas because turkey doesn't taste good, ham is icky, and a chicken is too small for 5 people. Pot roast is a thing but I don't have a big enough crockpot.

I'm excited, this is the second time I've cooked duck and I feel like it's already going better.

Tw duck dismemberment.

I got a whole duck and butterfly cut it to make it lay flat on the pan, which involves removing the tail, spine, and neck flap with kitchen shears. I also removed the rib cage for good measure because I don't need pointy bits in my meat. I had fun showing off my gross duck spine. To make it even flatter I put a small cut in the breast bone and squashed it a bit. Finally I flipped the bird and put two long, shallow cuts into the fat of the breast, not touching the meat.

Then I just doused the whole thing in salt, both sides. Now it's going to sit uncovered on the bottom shelf of my fridge until Christmas Eve when I cook it. By then the skin should be deliciously papery and crisp up like nothing else in a roasting pan. Then I'll collect the duck fat and make stuffing and roasted potatoes. :d

 

Yeah, that's kind of the point, just goose is impossible to get over here. c:

 

I work tomorrow afternoon and evening so we're having a big Christmas Eve dinner with a couple of friends. I've begun the cooking process, with help from my spouses.

I've made pasta salad already, and broccoli puff is baking now. Next I'll cook the duck and use the fat that drips off it to make stuffing and roasted potatoes.

Also I'm making pudding pie! I love pudding pie, and we got a cranberry crumble from the whole foods. And I'm about to start mulling apple cider in the crockpot. It's all very exciting.

I'm looking forward to seeing the end of this duck process, it'll be so delicious.

I got a raise at work! And it wasn't even my yearly merit based raise, which should be happening soon, it was a general raise for everyone because MA just approved a massive increase in addiction treatment spending for this year. It was exactly $1.27 an hour for the raise so I have no idea what math went into that but I approve. And my yearly raise is coming! Double raise!

We've also got more staff coming in, thank fucking God. It's taken forever, I was despairing of it ever happening.

I started the LADAC I courses, I'm excited. The classes are easy as hell so far but still interesting (when we stay on topic). We have to do one 5 page paper for the entire class, which is just adorable.
