I wrote 27 pages of a Days of Wasp and Spider/Undertale crossover! I intend to rewrite it at some point. I also thought of a Homestuck/Undertale crossover in which the trolls try to conquer Earth, and promptly get stuck in a time loop due to Frisk, and another one in which humans and monsters working together invented an FTL drive that didn't require a living being merged with the ship to work, unlike literally every other FTL drive in the universe. (It did require some DT, but that could be supplied by a mixture of the stuff filtered out from blood donations, and some DT donations via DT extractor. Its magic needs could be supplied by an electricity-to-magic converter, or an electronically managed voidtap if they didn't mind the danger.) Humans had access to DT-powered anti-magic, though it was tiring, and neither humans nor monsters has psionics at all-they were universally near-psi-inert. They also both had the inventory thing-sylladexes, without the physical cards and resulting complexity. The second non-Earthling sapient species they met was the trolls. (also I read that Avengers/Homestuck crossover and now the THIRD non-Earthling sophont is going to be Alternian computerbees.) Shenanigans ensure. So many shenanigans. EDIT: there was also an Undertale/Kerbal Space Program crossover, with First Flight/The Next Frontier style Kerbals and Kerm. As usual, the humans and monsters freak out the aliens. Time travel, magic, inventories, souls that can be taken out and moved around, DT, amalgamates, Chara wreaking electronic pranky havoc...
Portal/Undertale crossover where GLaDOS isn't testing the portal gun, but rather using the portal gun to test DT-powered time travel. She also has data on the effects of differing DT baselines on human durability. Her reason for letting Chell go in this AU is a mixture of 'got attached' and 'you do not want a hostile time traveller in a massive science facility'.

Flapjack and adventure time has always been a fave of mine. I havent found any really good content for it though, sadly.
I honestly have too many feelings about Kanaya and Pharma and they're not all to do with impromputations - they both fall into a very 'it's a hard decision and i'm making it' mindset at times and Kanaya does have a fascination with dangerous people. Also Karkat and Rodimus and leadership

Quadrants! Revolution! (There is not much concrete plot.) ...You can really tell which my favorite generation is. And favorite character.
