True, but it's really tasty. Like bone butter. Google tells me people eat it on toast with jam sometimes, rather than regular butter It's also used in some kinds of Jello and starbursts (though currently I think they use pork/beef skin over marrow and connective tissue these days) (I have done very little research other than a cursory Google check so take it with a bucket of salt)

Possibly because it's mostly "yellow" marrow, not the "red" RBC-producing marrow. Not sure if red marrow would taste more iron-y, but a potential possibility. Marrow is very high in fat, so it wouldn't be too surprising if the main taste was that unctuous, vaguely meaty fatty flavor/texture
