Got a can of oats, assorted greek yogurt flavors, some bananas, some flax seeds, and some other stuff for the purpose of giving this overnight oatmeal thing a try, will report back maybe tomorrow on how it turns out.
I've never understood overnight oats. Isn't it just an unblended smoothie? Grain slime in a jar? All the gooey, weird-textured parts of oatmeal without the soothing warmth that makes it all okay. idgi
I used to do one with lots of strawberries and it was like a parfait and nice in the summer, but sometimes a little weird texturally, yeah.
upd8: The plain vanilla control batch was pretty good! I was a little afraid of texture weirds, and it could have used a little more liquid, but it was good, nice and creamy and not gooey or slimy or anything, the oats just kinda in there, not all stuck together in gloppy clumps, and it tasted great. Tomorrow's batch: strawberry-banana yogurt with added banana chunks.
overnight oats is just a modern spin on muesli, right? as far as I know, you could either eat it with the liquid just added or let it sit overnight. /checks wikipedia holy damn, looks like overnight muesli was one of the original variations! the overnight oats seem to play around with thicker/creamier textures and more flavorings, in contrast to OG muesli. personally, I much prefer granola for the cronch; I tried overnight oats a while back and it was alright, but I'd probably stick them in the microwave to take the chill off if I did it again.
The ones i did were like... 1 cup frozen fruit, chopped 2/3ish cup greek yogurt (either plain or vanilla) Sweetener/sugar if plain yogurt used 1/3 cup rolled oats Like a tablespoon of milk Some cinnamon and stuff for Flavour Mix everything but the fruit together, spoon half into a 500ml container Throw half the fruit on Another layer of oatmixture Add the final fruits Throw into the fridge overnight and screm at own breakfast in the morning. A bit tedious to make every day so i would make like 2 or 3 days worth like a little assembly line

Strawberry banana overnight oats: great, wish I'd put in more banana chunks, but still great. Peanut butter chocolate oats are in the fridge. I put them together this morning to be eaten tomorrow, tested a spoonful just now and added a lot more milk and will probably need to add even more milk in the morning because apparently peanut butter stiffens the bajeezus out of this stuff.
Hokay. Peanut butter chocolate was still way too thick. Tasted good, but next time I'm gonna cut way back on the PB. Last night I put together some bananas foster style oatmeal (dulce de leche yogurt, splash of the sugar-free caramel syrup I put in my coffee, chopped banana) and ate it this morning and OH MY GOD I COULD LIVE ON THIS ONE. Holy shit that was good. That was so good. That one's a keeper.
Last night was Passover Seder so I had to cook a bunch of food 9 people some of which are vegetarian. I'm so tired. Oxtail stew - 10 hours in the slow cooker Mashed potato and mushroom pie - for the vegetarians Matzo ball soup - the stock for this takes 3 hours to make and uses more than a whole chicken Wine and cheese ball covered in candied nuts - because my S/O wanted it and who am I to disappoint Isn't usually the parents who are supposed to cook for holidays and get togethers? Everyone is just like "well you're the best cook so obviously you should do it" Now I need to figure out what I can eat for the next week.
I made ravioli from scratch yesterday night. It was a resounding success but I am too crippled for this kind of effort in single meal holy shit, it is not something I can do often. But still. Bcon pear and cheese. Heart shaped ravioli. Very good.
Dairy-free chocolate frosting! 2 c powdered sugar 1/4 c vegan butter substitute 1/4 c plain unsweetened soy/coconut/almond/hemp milk 3/4 c cocoa powder 1/2 tsp vanilla extract Cream butter/sugar, then add the other ingredients and beat until smooth. Has a good flavor and texture, pretty good for a dairy-free frosting recipe! The texture will change based on what kind of butter substitute you use, but Shedd Spread seemed to make a pretty good frosting.
My Penzey's order arrived today and so I am super excited. In one of my spice grinders there is now White Eternal Spring tea, white and black pepper, sea salt, and dried minced garlic. I tried some of it, and a little goes a long way, though I had to adjust the grind bigger to get a better balance of tea in the mix. I now have some chicken marinading in that and olive oil and am super excited.
I just woke up from a nap, and when I looked at the instructions for the tea, I briefly thought it meant put the tea in water, then turn 180 degrees while holding the mug.
