    also delicious: a tiny bit of instant coffee in chocolate ice cream. like. just a wee bit. mix the shit out of it with your spoon and devour. Hhhhhhhhhhhhhhhsogood and since its all offbrand stuff, way cheaper than Actual Coffee Ice Cream.

    It's nearly easter and I got picked to make an appetizer again for the family gathering :'3 One of my cousins is bringing bruschetta, so I definitely want to do something well different so there's not as much overlap.

    I was thumbing around and found this recipe for fruit spring rolls, which seems pretty light and tasty and visually attractive (and vegan for my vegan relatives unless they don't do honey, and that's just in the dip)

    Any opinions, fellow Kintsugijin? Does it look like a tasty and suitable appetizer? Looking at the recipe, do you think it's a good pick for someone who only occasionally does the whole 'prepared food' thing? The main stumbling blocks to me seem like a) oh god how do i matchsticks and b) oh god I've literally never laid hands upon rice paper wraps. Any tips for that, or should I look for a different recipe?

    For matchsticks, cut the item into 1/8th inch slices, set the slices down so that they sit flat on the board, stacked on top of each other. Then, slice those into 1/8th inch sticks.

    Rice paper wraps - if you've never worked with them before, be prepared to use a few extra as you work out what to do. When damp, they're stretchy and they stick together, which is a recipe for holes if you don't know how to roll them. The recipe says soak for twenty seconds, but I always go for 40 when I use them. Maybe experiment a little to see which is easier for you to work with? But the folding directions in the recipe are sound.

    my "i feel like eating tofu for some reason and it's cooking up but i need a really nice savory strong sauce to put on it and i'm closer and closer to keeling over from being on my feet too long" sauce

    proportions are eyeballed/to taste:
    dash of salt, bit of sugar, soy sauce, yakisoba sauce, green onion diced up, minced garlic, ginger paste, lil water, pepper. i would’ve added some mirin or rice vinegar but i couldn’t spot it and i was up on my feet so long flailin’ with the tofu that i was going down fast and needed to be quick. heated it till the green onion wilted. poured over tofu. am inhaling blissfully as we speak.

    the spring rolls came out well and were popular! Took forever to make though, even with my roomie's help x3 Had to replace the peaches since they weren't in-season enough to be at my grocery store, but I found a pair of large plums that were quite tasty and had nice color to their flesh.

    I have SO MUCH extra fruit that didn't fit into the rolls though????? Like, enough to fill quite a large mixing bowl. I don't get it, yeah I doubled the recipe but it was a really simple doubling- one cantaloupe instead of half of one, two apples instead of one, two mangos instead of one, etc etc. Wonder if my rice paper wraps were too small? but afaik they come in a pretty 'standard' size, there was really only the one package at the grocery store.

    I got some of grandyoats's stuff for free from work a while ago and it was delicious so I thought I'd try to copy it. It was surprisingly easy! I might include some oats or something next time because the ingredients aren't as expensive per pound as the finished product but they are still pretty expensive.

    I didn't actually use a recipe, I just kind of eyeballed everything, unfortunately. The ingredients are flaked coconut, pumpkin seeds, sunflower seeds, sesame seeds, flax seeds, sliced almonds, pecans, and walnuts, and if you have any other nuts or seeds that you think would be good you could toss those in there too (the grandyoats version has cashews but no almonds, flax seeds, or walnuts). I heated up about equal amounts of honey and maple syrup (maybe a little more syrup) plus a pat of butter in a small saucepan, took it off the heat as soon as it started boiling, and added that too. Then I spread it out on a couple cookie trays with parchment paper and stuck it in the oven at 350 for about 7-10 minutes. It came out on the crispy side so you might want a bit less time than that.

    I'm not sure of the exact proportions of any of this, bit if I make it again I'll try to remember to actually measure things and post it here!

    Thanks! No prob on the not measuring thing, I'm not the greatest at that whole deal. I'll probably try a salted caramel syrup, maybe throw in some dark chocolate caraque once it cools because almost-dessert for breakfast, yes please.

    Oh I forgot to mention - there was also some vanilla in with the honey and syrup so you may want to add that too
