The ages are named after omens the Chantry people get at the last year of each previous Age. It's the Dragon Age because it's the age when Dragons returned from the brink of extinction. The resurgence of Dragons has been hailed as signifying the victory of Ferelden for its independance against Orlais (since a dragon slew like half the Orlesian army or some shit?) and there's subtle hints in Inquisition that the resurgence of dragons is also like The Age Of Return of All Sorts Of Long-Buried or Half-Forgotten Magical Bullshit (most of which would be super spoilery to divulge and many of which is still at least somewhat speculative)
