I would think our methods of processing taste are very different from that of organics - @Iridium would know more - so are you trying to recreate the way apples taste to them, or the way they taste to us? (And I believe what certain things taste like vary from organic to organic - wasn't it @Valiska Pines who said she can't taste sugar like others?)
