I started reading wookiepedia pages and Christ, what intense world building. I won't try and learn even a fragment since I understand that there are now two, eh, verses since TFA, which I think people are calling Canon, and the other verse/timeline as... Legends? But still, I had no idea it was this huge.
The Extended Universe is HUGE. And yes, with the advent of TFA, a whole lot of it became non-canon since they're doing a new route with TFA, and all that non-canon junk that used to comprise a whole Star Wars universe is now a Star Wars Alternate Universe called Legends. It gets tricky, because the Legends involve a lot of far past worldbuilding and work on races and empires and planets that may as well be canon, and still more or less is, so you have to... honestly decide for yourself how canon the legends are.
I guess I will wait and see if, say, more details of Aldeeran history would matter in the Canon to go diving into the Legends stuff.
I'd imagine it's HIGHLY unlikely that they'll be directly contradicting a lot of the broad strokes, especially of the more distant backstory stuff like SWTOR, and most of what's going to be Definitely Not True is stuff set during and after the first six movies.

Holy shit, that was so good. Also I love good Windu fanworks. I remember not knowing what to make of him as a kid when I initially watched the prequels since he was kinda...inscrutable, but reading stuff that fleshed out his personality made me really like him as a character.
@Enzel that is because it is AMAZING. I want somebody to write that epic AU fanfiction. @Raire OH YES THE LEGENDS EU IS INSANE. But I love it. Some of my favorite star wars stuff comes out of it. Would you believe that this is not the first time Anakin Skywalker has had a grandson named Ben? Or that this is not the first time Han Solo's force-wielding son has turned into an evil menance? :3 And there are some really great characters and fun moments. And perhaps a suspiciously large number of Dangerous And Attractively Red-Haired Imperial Women. Mara Jade and Admiral Daala, I'm looking at you.... Did Palpatine have a thing for gingers? Further testing is required. Can I include Brendol Hux from The Force Awakens in the list of dangerous/attractive Imperial gingers? I'm not sure yet. I'm gonna do it though.
Honestly I could take or leave a lot of the later EU especially (NJO...) but Mara Jade and Tenel Ka live forever in my heart. I'm quite fond of Jaina as well. (And Anakin Jr.)
How could I have forgotten about Tenel Ka. I grew up reading the little kid boots about little kid Anakin Solo and his friend(s). Ikrit the kushiban was my favorite Jedi Master for years and years. <3
How is Rebels? I hear it is good. I never really got into it considering I'm watching other shows at the moment. I never have any time.
If someone wanted to get into the EU after only ever having engaged with the movies, where is a good starting place?
Aside from that, if you have a character from the movie you like, especially the original trilogy, there's a good chance you can find a book just about them, or a book heavily featuring them! The best thing about the EU is that there are a lot of specials and materials focused on things that are small details in the movie so if you can pick out a character or event you like you can probably find something that goes into much more depth about it!

Assuming that what we see in the movies is all Han knew about The Force and the Dark Side at the time, would he find it credible if she did?
I mean, she could tell Luke, and probably both of them together could convince Han. (I mean, Luke spends the entire trilogy progressively pulling more and more Force powers out of his ass. I imagine that would be a point in favor of Han believing them.)
